– After dicing the sweet potatoes, put them in a microwave safe bowl with olive oil and salt, then microwave (covered) for 5 minutes. This can shave 10 minutes off of the final stretch of baking time at 500°.
– Add chili powder to the vegetables before cooking (and a dash of cayenne if you feel adventurous).

I made sure to measure heaping scoops of all the spices because potatoes can make a dish bland quickly. This was a GREAT recipe to use up the last of my taters that were getting soft and growing nodes. I did an 8×8 pan, 4 taters, 1/2 cup of corn. I sliced the potatoes as I layered to fill the pan. I did keep the full sauce volume. The author is right, it thickens as it cools so if it’s watery out of the oven don’t worry! I enjoyed it and will keep it for when the holidays come around. Maybe I’ll add something green next time like a layer of chopped spinach. This is a forgiving and versatile dish.

I have made it twice now and it was even better the second time. The only difference was I used the herbes de provence vs thyme this last time, and measured 1 teaspoon of salt and 1/2 teaspoon black pepper. Hubs mentioned numerous times that it has a delicious flavor this time and last time.

Everyone is obsessed with these cookies! I reduced the sugar and they are delicious! Texture is chewy and soft! I am wondering how and if I can incorporate oatmeal to these? Any advice?
